Corn, the long Pacific, and a casserole that hides a meat stew under a sweet maize crust. Chilean cooking is thin and long, like the map.
Pastel de choclo is a summer oven dish: minced beef or chicken with onion, olives, a hard-boiled egg, sometimes raisins, covered with a blended fresh-corn topping that browns in the oven. It is a cazuela's cousin, not a shepherd's pie with a flag. Coastal kitchens do caldillo de congrio and razor clams; the Mapuche south keeps merken chilli and potatoes; the north is more Andean. Completo is a hot dog loaded until it is Chilean. Bread (marraqueta) is daily. Pebre is a chopped chilli-coriander sauce, not guacamole. The corn in pastel de choclo should taste sweet and fresh, which is why it is a season.

Mapuche, Aymara and other Indigenous pantries met Spanish ovens, cattle and wheat. Corn casseroles exist across the Andes; Chile's pastel de choclo is a specific sweet-corn lid on a pino filling. German immigration in the south left cakes and beer. Wine export did not invent the home casserole. Twentieth-century urban Santiago added the completo and a bakery habit. Honesty means naming Mapuche merken and potatoes without using them as garnish for a coastal restaurant, and treating pastel de choclo as seasonal home cooking.
