What is umami?

The savoury taste. Not a marketing word for 'tasty'.

Umami is a basic taste, often from glutamates and nucleotides — kombu, Parmesan, tomatoes, soy, mushrooms, slow-cooked meat.

MSG is a seasoning some cooks use. It is not a moral failing. We will not invent scare stories.

If a dish tastes flat, salt, acid and a glutamate-rich ingredient are more useful than the word umami on a menu.
