Suspiro limeño is a cup of manjar blanco (dulce de leche-ish milk caramel) topped with a wine-scented Italian meringue and cinnamon. It is very sweet. That is the point. This version uses condensed milk cooked to manjar, then a meringue with a splash of port or sweet wine. Serve cold in small glasses. Nobody needs a trough. Cook condensed milk with a little evaporated milk or cream to a manjar blanco, or use a dulce de leche that is actually thick. Cool it in small glasses. Top with an Italian meringue cooked over a sugar syrup, scented with port or another sweet wine, and dust cinnamon. It is very sweet. That is the point. Serve cold. Nobody needs a trough. A piping bag is café habit; a spooned cloud is home.
