Southern, New Mexican, Cajun, New England, Californian, Hawaiian, and a thousand diaspora kitchens that became local. New England clam chowder is cream or milk, clams, potato — the tomato version is a different argument. Texas-style brisket is post oak, time, and a salt-and-pepper crust, sliced against the grain. New Mexican pork chile is chilli as a stew, red or green, not a garnish. A smash burger is a diner technique of thin beef and a hard sear. Gumbo and jambalaya belong to the Gulf; they are not interchangeable. Treating one fast-food icon as the whole story is how you miss the point.

American food is most itself when it names the region and the people, not the myth of a melting-pot flavour. Twentieth-century industrial food changed weeknights without erasing regional barbecue, chile, chowder or the immigrant restaurant that became the neighbourhood kitchen. Hawaiian cooking, with Japanese, Filipino, Korean and Native Hawaiian layers, is an ocean kitchen rather than a costume. Honesty is geographic.
