This is an oven (or kettle-grill) version that will not fool a pitmaster and will still feed a table. We are not calling it authentic lock, stock and barrel. We are calling it honest.     Trim hard fat so a 5mm cap remains. Rub salt and pepper (and paprika/garlic if you must). Rest 1 hour or overnight.

    Oven 120°C, brisket on a rack over a tray, 5–6 hours until a skewer slides in with little fight (around 93°C inside). A pan of water keeps the oven from turning the meat to jerky.

    Wrap in foil, rest 1 hour. Slice against the grain. Pickles, onion, white bread. Sauce on the side.
