Belgian waffles are not the sad hotel square. Brussels waffles are a lighter yeast or beaten-egg batter in a deep iron. Liège waffles are a denser dough with pearl sugar that caramelises. This is a home Brussels-leaning waffle: yeast, overnight if you can, deep pockets, icing sugar. Strawberries if it is that kind of morning. Brussels-style batter is lighter: yeast or well-beaten eggs, a rest if you can, then a deep iron so the pockets hold icing sugar or fruit. Liège waffles are a denser dough studded with pearl sugar that caramelises on the plates; that is a different project. This home version leans Brussels. Butter the iron. Serve at once. A sad hotel square is a different, later product and should not set your expectations.
