About
These are cold or hot wheat noodles dressed with soy, black vinegar, minced garlic and a lot of chilli crisp (the oily, crunchy jar). Scallion-oil noodles are the Shanghainese cousin already on this site. This is the internet jar version: five minutes, loud, excellent at midnight. Eat hot or cold. Add cucumber, a fried egg, or leftover chicken if you want a meal. If it tastes only of oil, you forgot the vinegar and salt. If it tastes only of soy, you were shy with the crisp. This is not a purist regional bowl and does not pretend to be. It is a real bowl that happens to come from a global jar. Serve in a deep dish. Chopsticks. Leftovers clump; loosen with a splash of hot water. Cook the noodles a minute shy of soft, drain, and toss while they steam so the dressing sticks. Garlic should be raw and loud. The jar contributes crunch and chilli oil; soy and vinegar do the savoury-sour work the jar cannot. Cucumber ribbons or a jammy egg turn midnight noodles into a meal. If you only have chilli oil without sediment, add toasted sesame and a pinch of sugar for body. Eat from a deep bowl before the starch sets.

History & culture
Chinese chilli oils are regional and serious. The global jar (Lao Gan Ma and its children) made a home sauce into a personality. Still a real bowl. Still a real bowl. Students cook it because the jar lives next to the kettle. Restaurants put chilli crisp on menus because diners learned the words. That is culture too: a branded condiment teaching a flavour, then people cooking toward it. It is midnight food, hangover food, and a desk lunch. It is not a banquet. People who grew up with homestyle chilli oil may find the jar coarser or oilier; they can use their own. The dish is a meeting point. Eat it when you cannot be bothered and still want something that tastes decided. Spring onion on top is the fresh note. English-language internet turned a supermarket jar into a personality, then restaurants printed the words because diners had learnt them. Students keep the jar next to the kettle. The bowl is a meeting point for midnight, hangovers, and desks. Spring onion is the fresh note. It is not a banquet and does not need to be.
Oil-dressed noodles are old. The branded crisp topping is late 20th century and then everywhere. Oil-dressed noodles are old in Chinese cooking. This plate sits at that junction: ancient-ish noodle logic, recent industrial condiment. Naming the jar is historical hygiene, not a lack of romance. There is no Qing-dynasty factory chilli crisp. There is chilli in oil, fermented bits, and a factory. Home oils still exist and are better in some kitchens. The internet bowl is a legitimate descendant of dressed noodles, not a fake. Cook it as contemporary Chinese-ish pantry food, which millions now do inside and outside China. That spread is the history happening now. Vinegar and garlic keep it in the family of dressed noodles rather than in the family of beige instant pots. Dressed wheat noodles in oil, soy and vinegar are an old Chinese home move. Factory chilli crisps are late twentieth century, then global in the 2010s. Naming the jar is hygiene, not a romance failure. The internet bowl is a descendant, not a fake. Cook it as contemporary pantry food that millions now make on both sides of the customs queue. Garlic and vinegar keep it in the dressed-noodle family.
