About
Pide is a yeasted oval, edges folded, filled with cheese or kıyma (mince) or an egg cracked on at the end. The crust should blister. Supermarket 'Turkish pizza' is a marketing line we will not repeat without wincing.

Knead dough, rise 1 hour. Stretch ovals, pile cheese, fold the rims. Optional egg in the middle for the last 5 minutes.
