Steps
Step 1
Preheat fryer to 350°F. Thoroughly mix together all the spice mix ingredients.
Step 2
Combine spice mix with flour, brown sugar and salt. Dip chicken pieces in egg white to lightly coat them, then transfer to flour mixture.
Step 3
Turn a few times and make sure the flour mix is really stuck to the chicken. Repeat with all the chicken pieces.
Step 4
Let chicken pieces rest for 5 minutes so crust has a chance to dry a bit. Fry chicken in batches.
5 minStep 5
Breasts and wings should take 12-14 minutes, and legs and thighs will need a few more minutes. Chicken pieces are done when a meat thermometer inserted into the thickest part reads 165°F.
14 minStep 6
Let chicken drain on a few paper towels when it comes out of the fryer. Serve hot.

Substitutions
chicken → tofu
Press firm tofu, marinate as you would the chicken, and cook until browned. This is an adaptation, not the original dish.
egg (silken tofu or skip (depends on the dish)) → silken tofu or skip (depends on the dish)
Carbonara without egg is not carbonara. Fried rice can skip the egg. We will not pretend otherwise.
flour (a gluten-free blend (not plain rice flour alone for bread)) → a gluten-free blend (not plain rice flour alone for bread)
Coatings and roux can swap. Yeast breads need a blend designed for gluten-free baking.
onion → shallot
Shallots are sweeter. Use the same volume, or a little extra onion if that is what you have.
chilli (paprika or chilli flakes) → paprika or chilli flakes
Paprika is milder and sweeter. Add cayenne if you still want heat.
garlic (garlic powder or a pinch of onion) → garlic powder or a pinch of onion
1 clove ≈ ¼ tsp garlic powder. The fresh bite will be missing.
