About
You smash cucumbers with the side of a cleaver so they split and drink the dressing: garlic, black vinegar, soy, a little sugar, chilli oil. It takes five minutes and should taste louder than the ingredient list. The internet called it a salad hack. Northern Chinese tables called it dinner's crunch. Toss with salt, drain a minute if they weep a lot, then add garlic, Chinkiang or another black vinegar, soy, a pinch of sugar, chilli oil, and maybe sesame. Serve soon, cold. Do not slice neat coins if you want the ragged surfaces. Do not drown it in oil. Taste and add vinegar until it makes you blink. Leftovers go watery; this is a same-hour dish. Peanuts on top are a house extra. Spring onion too. Smash until the seeds show and the flesh looks ragged, then salt so water leaves before the vinegar goes on. Garlic should be smashed too, not minced into perfume dust. A spoon of chilli oil and a pinch of sugar make the sour readable. Taste after two minutes; cucumbers keep drinking. Serve in a shallow bowl so people can hunt the garlicky bits. This is a five-minute plate that still needs a proper sour.

History & culture
A cold dish next to rice and a stir-fry. Every household has a vinegar-to-soy ratio. It is not a side salad in the lettuce sense. It is a sharp, wet crunch that makes rich food possible. Restaurants in China put it on the table without fuss. Diaspora weeknight cooks made it famous again because it is fast and loud on camera. Both are true. Eat it with other dishes, not as a virtuous lunch bowl unless that is honestly what you wanted. People who dislike raw garlic should still try a smaller clove. It is summer food that works in winter if the cucumber is decent. Cheap cucumbers are the point. Fancy heirloom fruit is unnecessary. Put it out with rice and something fatty so the vinegar has a job. Garlic levels are a household setting, sometimes a dare. It is not lettuce. It is a wet, loud crunch. Restaurants in China send it out without a speech. Diaspora cooks revived it because it is fast and noisy on a phone. Eat it beside other dishes. Pale winter cucumbers still work if you salt them first. Fancy fruit is wasted here.
Smashing (pai) is older than the TikTok sound of the knife. Chilli oil is the modern heat. Splitting cucumbers so the dressing can cling is older than phones filming a cleaver. Heat from a spoon of chilli oil is a later kick on a vinegar-and-garlic habit. There is no need to claim an imperial inventor. Northern home cooking likes cold, garlicky vegetables beside a starch. The global hack frame is twenty-first-century media laid over that. Cooking it at home is closer to the older plate than to the hack, even if you learned it from a video. Black vinegar as a pantry bottle is the flavour of a lot of this family of dishes. Keep the method violent and the dressing balanced. That is the through-line: texture first, then a loud cold sauce. The app is optional. Television and phones taught a new audience the cleaver; the dressing was already on the table.
