Fried rice is a leftover technology. Cold rice, a ripping-hot pan, eggs scrambled first or around the rice, spring onion, soy used like a seasoning not a sauce. This version adds a little chicken because the journey asked for it. The grains should stay separate. If it clumps into a pudding, the rice was wet or the pan was timid. Use cold, day-old rice with separate grains; fresh steamed rice clumps. Preheat the pan until a drop of water skitters, then scramble eggs and set them aside or push them aside. Add a little oil, then the chicken in small pieces so it sears rather than steams. Rice goes in next: press and toss, do not stir like risotto. Season with soy, a pinch of sugar if you like, white pepper, and lots of spring onion at the end. The pan must stay hot; crowding is how you get pudding. A splash of sesame oil off the heat is a finish, not a frying medium. Taste for salt. Serve at once. Leftovers keep, but the grains soften. Frozen peas are allowed if they go in late and still pop. Dice the chicken small so it cooks in the time the rice needs. If the pan cools, work in two batches rather than stirring a crowded clump until it steams.
