About

Gomen is collards or similar greens cooked down with onion, garlic and ginger until they are soft and dark. Not a 90-second stir-fry. Ethiopian kale or collard is the leaf; supermarket collards or cavolo nero work.

Ingredients

Scaling multiplies the written quantities. Baking still prefers a scale.

Steps

  1. Step 1

Strip stems, slice leaves. Soften onion in oil, add garlic, ginger and chilli.

    8 min
  2. Step 2

Add greens, water and salt. Cover and cook until tender, 20–25 minutes. Uncover to dry a little.
