Ackee

The fruit of Blighia sapida. Only the ripe yellow arils are eaten, and only after the fruit has opened on the tree. They are boiled before they are served. The unripe fruit and the pink membrane are dangerous.

Origin

A West African tree, and a national fruit of Jamaica, where the arils are cooked with salt fish.

Flavour

Mild, buttery, and a little like scrambled egg in texture.

How to use it

Use tinned ackee, already prepared, or boil fresh ripe arils in salted water until tender.

Storage

Tinned ackee is cupboard stock until opened, then refrigerated. Do not experiment with unopened fresh fruit.
