The edible seeds shaken from the cones of certain pine trees. The shell is removed and the kernel is sold raw or toasted.

Origin

Collected from stone pines around the Mediterranean and from other pines in Asia and North America.

Flavour

Soft, buttery, and faintly resinous.

How to use it

Toast them gently for pesto, salads, and pastries. They burn quickly.

Storage

They go rancid fast. Refrigerate or freeze them in a sealed jar.
