Apricot

The fruit of Prunus armeniaca, a small stone fruit with orange flesh and a single pit. The skin can be fuzzy.

Origin

Native to Central Asia and long grown around the Mediterranean and in other temperate orchards.

Flavour

Sweet-tart, floral, and musky when ripe.

How to use it

Eat ripe fruit raw, or halve and roast it. Underripe apricots cook better than they eat.

Storage

Ripen them at room temperature, then refrigerate.
