Asparagus

The young spears of Asparagus officinalis, cut while the stalk is still tender. Green, white, and purple spears are the same plant grown differently.

Origin

Native to the eastern Mediterranean and Europe, and farmed in temperate regions.

Flavour

Grassy, sweet, and slightly sulphurous.

How to use it

Snap off the woody end and boil, steam, or roast the spear briefly.

Storage

Stand fresh spears in a little water in the fridge and cook them within a couple of days.
