Basil Leaves

The fresh leaves of sweet basil, Ocimum basilicum. The aroma is in the volatile oils in the leaf, which heat drives off.

Origin

Long grown from the Mediterranean to Southeast Asia. Sweet basil is the Genovese type.

Flavour

Sweet, clove-like, and aniseed.

How to use it

Tear the leaves and add them at the end, or pound them raw for pesto.

Storage

Stand a bunch in water, or wrap it and refrigerate it. Use it before it blackens.
