Bicarbonate Of Soda

Sodium bicarbonate, a white alkaline powder. When it meets an acid and a liquid it releases carbon dioxide, which lifts a batter.

Origin

Refined from natural soda deposits and from industrial processes.

Flavour

Soapy and bitter if any is left unreacted.

How to use it

Pair it with an acid already in the recipe, such as buttermilk, yoghurt, or treacle. Do not add extra for luck.

Storage

Sealed and dry. It lasts, but an old box is weaker.
