The nuts of the sweet chestnut tree, in a glossy brown shell and a bitter inner skin. They are mostly starch, so they cook like a vegetable.

Origin

The European sweet chestnut is native to southern Europe and western Asia.

Flavour

Sweet and mealy once cooked, and tannic if the inner skin is left on.

How to use it

Score, roast, or boil them, then peel them while they are warm.

Storage

Refrigerate fresh chestnuts and use them before they dry out or mould.
