Chinese Leaf
Napa cabbage, an oblong head of crinkled pale leaves on thick white ribs. It is Brassica rapa, a different plant from round European cabbage.
Origin
A Chinese brassica, also the leaf used for kimchi.
Flavour
Sweet, mild, and juicy.
How to use it
Separate the leaves for dumplings and soups, or cut the head into stir-fries. It cooks down a great deal.
Storage
Refrigerate a whole head. It keeps longer than soft lettuce.
