Chinese Sesame Sauce

A sauce of ground toasted sesame, loosened with water and often seasoned with soy and sugar. The body is Chinese sesame paste, which is darker and more roasted than pale tahini.

Origin

A northern Chinese condiment, used on noodles and cold dishes.

Flavour

Deeply nutty, salty, and a little bitter.

How to use it

Thin it with water until it coats a noodle, and adjust the salt.

Storage

Refrigerate after opening. Stir the oil back in before using.
