The fermented juice of apples. Yeast turns the fruit sugar into alcohol. Dry cider has little sugar left. Sweet cider still has some.

Made in apple countries, notably Britain, Normandy, and northern Spain.

Appley, from bone-dry and tannic to sweet.

Drink it, or braise pork and fish in it.

Keep bottles cool. Refrigerate after opening.
