Corned Beef

Beef, usually brisket, cured in a salty brine. The name comes from the coarse grains, or corns, of salt. Tinned corned beef is that meat, cooked and packed.

A preserving method of the British Isles and, later, a canned product associated with industrial meat packing.

Salty, beefy, and firm.

How to use it

Simmer a raw cured brisket until tender. Slice tinned corned beef and fry or hash it.

Storage

Keep a raw cure refrigerated. An unopened tin is cupboard stock. Refrigerate it once open.
