Immature fruit of a summer squash, cut while the skin is still soft and the seeds are barely formed. The plant is Cucurbita pepo.

A New World squash, eaten young in European kitchens under this French-derived name.

Flavour

Mild, green, and watery, sweeter when browned.

How to use it

Slice and fry, grill, or grate them. Salt grated courgette if you need the water out.

Storage

Refrigerate and use within a few days. They pit and soften if left.
