Currants
Small dark grapes of the Black Corinth variety, dried until they are tiny and sweet. In a baking list, currants mean this dried fruit, not fresh redcurrants.
Origin
Dried from a grape long grown in the eastern Mediterranean, and named in English via Corinth.
Flavour
Sweet, tangy, and concentrated.
How to use it
Fold them into cakes, puddings, and pilafs. A short soak plumps them.
Storage
Airtight and cool.
