A British-style blend of ground spices, coloured gold by turmeric and built on coriander, cumin, fenugreek, and chilli. The recipe changes with the brand.

Mixed in Britain from spices that arrived through colonial trade, and now blended everywhere.

Earthy, warm, and mildly hot.

How to use it

Fry it in oil for a minute so the raw spice taste cooks out, then add the liquid.

Storage

Airtight and dark. Old powder tastes dusty.
