Dried Sorrel

The dried calyces of roselle, Hibiscus sabdariffa, called sorrel in the Caribbean. They are the red outer parts of the flower, dried for steeping. This is a different plant from the green herb also called sorrel.

Origin

Grown in the tropics and dried for drinks and preserves.

Flavour

Tart, cranberry-like, and floral.

How to use it

Steep it for a cold drink, or simmer it with sugar into jam.

Storage

Airtight, cool, and dark.
