Dry sherry

A fortified wine from the Palomino grape, aged under the flor yeast or deliberately oxidised, then fortified with grape spirit. Dry styles such as fino and amontillado have little sugar.

Origin

Made in the region of Jerez in southern Spain.

Flavour

Nutty, saline, and sharp, with a clean finish in the driest styles.

How to use it

Splash it into pan sauces and soups. A dry sherry for cooking should still be fit to drink.

Storage

Keep an opened bottle in the fridge and finish it within a few weeks.
