The fennel plant, Foeniculum vulgare. Recipes that list it as a vegetable mean the swollen bulb at the base, with the stalks and feathery fronds attached.

How to use it

Shave the bulb raw into salads, or braise and roast it. The fronds work as a herb.

Storage

Refrigerate the bulb in a bag. It softens after several days.
