Freekeh
Durum wheat harvested while the grain is still green, then sun-dried and roasted so the chaff burns off. The berry is cracked or left whole.

Origin
A Levantine way of saving unripe wheat, still made across Syria, Lebanon, Jordan, and Egypt.
Flavour
Smoky, grassy, and a little sweet.
How to use it
Simmer it like rice in stock, or soak cracked freekeh and fold it into salads.
Storage
Airtight and cool, like other whole grains. Cooked freekeh belongs in the fridge.
