Glace Cherry
A cherry preserved in a heavy sugar syrup until the fruit is candied and brightly coloured. The colour is often helped with a dye. The fruit underneath is a sour cherry.

Origin
A candied fruit for baking, especially British cakes.
Flavour
Very sweet, with a faint cherry taste.
How to use it
Rinse and dry them if the syrup would stain a pale batter, then fold them into cakes.
Storage
Airtight, at room temperature.
