Ground Cardomom

The seeds of green cardamom, Elettaria cardamomum, milled to a powder. The pod is a dried fruit. Most of the perfume is in the small black seeds.

Origin

Native to the forests of southern India and now grown in Guatemala, India, and elsewhere.

Flavour

Floral, citrusy, and eucalyptus-like.

How to use it

Use a pinch in rice, doughs, and spice mixes. Preground cardamom fades, so a freshly opened jar matters.

Storage

Airtight and dark.
