Hazlenuts

The nut of the hazel, Corylus avellana, cracked from a hard round shell. The kernel is the hazelnut.

Origin

Grown in orchards around the Black Sea, in Italy, and in the Pacific Northwest.

Flavour

Sweet, toasted, and a little woody.

How to use it

Toast and rub off the skins for praline, chocolate, and salads.

Storage

Refrigerate or freeze. The oil stales at room temperature.
