Kale

A loose-leaf brassica, Brassica oleracea, grown for its frilled leaves rather than a tight head. The leaf is sturdy and the stem is tough.

Origin

A European cabbage relative, a winter garden green.

Flavour

Mineral, cabbagey, and slightly bitter, sweeter after cold and after cooking.

How to use it

Strip the leaves from the ribs. Massage them for salad, or simmer and roast them.

Storage

Refrigerate in a bag. It keeps longer than lettuce.
