Mature Cheddar

Cow's-milk cheddar aged until the paste turns sharp, firm, and crumbly. Cheddar is a method: the curd is stacked and pressed so acidity and texture develop.

Origin

The method comes from Somerset in England. Mature cheddar is that cheese given months or years.

Flavour

Savoury, tangy, and nutty.

How to use it

Grate it into sauces and bakes, or eat it in pieces. It melts, though an extra-aged piece can split oil.

Storage

Wrap it and refrigerate. Let it warm before eating.
