Water spinach, Ipomoea aquatica, a hollow-stemmed green cooked quickly in a wok. In Cambodian and Southeast Asian cooking the name morning glory means this vegetable.

Mild, sweet, and grassy, with a crisp stem.

How to use it

Stir-fry it hot and fast with garlic. The stems take a few seconds longer than the leaves.

Storage

Refrigerate and cook it soon. It wilts.
