Mung Bean Paste
Hulled mung beans boiled and mashed, usually sweetened, into a dense paste. The bean is Vigna radiata. Hulling leaves the yellow cotyledon.
Origin
A filling of Chinese and other East Asian pastries.
Flavour
Sweet, beany, and smooth.
How to use it
Use it as a bun or pastry filling. Savoury pastes skip most of the sugar.
Storage
Refrigerate and use within a few days, or freeze.
