Orange Zest

The coloured outer peel of an orange, grated or stripped, with the white pith left behind. The oils in that thin layer are the flavour.

Origin

From the rind of a cultivated orange, Citrus sinensis.

Flavour

Bright, floral, and bitter only if pith comes with it.

How to use it

Grate it into batters, sugar, and sauces. A microplane keeps the pith out.

Storage

Use fresh zest at once. It also freezes well, or dries for later.
