Padron peppers

Small green peppers from the Padrón type, a cultivar of Capsicum annuum. Most are mild. A few in any pile are hot, with no way to tell by looking.

Origin

Grown in Galicia in Spain, and now elsewhere.

Flavour

Grassy and sweet, with the occasional fierce one.

How to use it

Fry them hot in oil until the skins blister, and finish with salt.

Storage

Refrigerate and cook within a few days.
