Pomegranate

The fruit of Punica granatum. Inside a leathery rind are hundreds of seeds, each wrapped in a jewel of tart-sweet juice. The white pith is bitter.

Origin

Native to the region from Iran to northern India, and grown around the Mediterranean.

Flavour

Sweet-tart and winey.

How to use it

Cut the fruit open and knock out the seeds. Eat them, or press them for juice.

Storage

Whole fruit keeps cool for weeks. Refrigerate the seeds and eat them within a few days.
