Plums dried until most of the water is gone and the sugars concentrate. The usual fruit is a prune plum such as d'Agen.

Origin

Dried in France, California, Chile, and other plum-growing regions.

Flavour

Deep, sweet, and slightly tangy, with a wine-like note.

How to use it

Eat them as they are, soak them for stews and baking, or simmer them into a purée.

Storage

Airtight at room temperature, or in the fridge if the kitchen is warm.
