Pul Biber
Turkish chilli flakes, sun-dried and usually seedless, often rubbed with a little oil. The chilli is a medium cultivar of Capsicum annuum. Aleppo pepper is a close cousin.
Origin
Dried in southern Turkey and northern Syria.
Flavour
Fruity, warm, and moderately hot, with a raisin-like sweetness.
How to use it
Sprinkle it on finished food or bloom it in butter and oil.
Storage
Airtight and dark.
