Quinoa

The small seeds of Chenopodium quinoa, a plant grown for its grain-like seed. Each seed has a bitter natural coating called saponin, usually rinsed off before it is sold.

Origin

Domesticated in the Andes and now grown in highland and temperate farms beyond South America.

Flavour

Mild, nutty, and slightly grassy.

How to use it

Rinse it, then simmer it in salted water until the germ spirals out.

Storage

Airtight, cool, and dry. Cooked quinoa belongs in the fridge.
