Ras el hanout

A Moroccan spice blend whose name means 'head of the shop': the seller's own mix of many ground spices, often cinnamon, cumin, coriander, ginger, turmeric, pepper, and flower petals.

Origin

Compounded in the spice shops of the Maghreb. No two blends match exactly.

Flavour

Complex, warm, and floral.

How to use it

Stir it into tagines, couscous, and rubs. Fry it briefly so it does not taste raw.

Storage

Airtight and dark.
