Red Cabbage

A tight head of cabbage whose leaves are coloured purple-red by anthocyanin pigments. It is Brassica oleracea, the same species as green cabbage.

Origin

A European storage cabbage.

Flavour

Sweeter and deeper than white cabbage, and it turns blue or pink with acid and alkali.

How to use it

Braise it slowly with something acidic, such as vinegar or apple, or shred it raw for slaw.

Storage

A whole head keeps for weeks in the fridge.
