Rocket
The peppery leaves of Eruca vesicaria, a mustard relative. The leaf is eaten raw, stem and all when it is young.
Origin
Long grown around the Mediterranean.
Flavour
Hot, nutty, and green. Older leaves are fiercer.
How to use it
Toss it with oil and salt at the last minute. Heat wilts it almost at once.
Storage
Refrigerate, unwashed, in a loose bag. Use it before it yellows.
