Rosemary

The needle-like leaves of an evergreen shrub, Salvia rosmarinus. The flavour sits in the aromatic oils in the leaf.

Native to the Mediterranean coast and grown in gardens well beyond it.

Flavour

Piney, resinous, and camphor-like.

How to use it

Use sprigs whole in roasts and stews, and strip the leaves for chopping. A little is enough.

Storage

Fresh sprigs keep in the fridge, wrapped. Dried leaves keep in a jar, with a quieter flavour.
