Savoy Cabbage

A headed cabbage with deeply crinkled, flexible green leaves. It is Brassica oleracea, looser and more tender than a smooth white cabbage.

Origin

Associated with the Savoy region and grown as a cool-season cabbage.

Flavour

Mild and sweet, with a softer bite.

How to use it

Use the leaves for wrapping, or shred and cook them. They wilt faster than a hard white cabbage.

Storage

Refrigerate. It keeps, though the outer leaves yellow.
