Scotch Bonnet

A very hot lantern-shaped chilli, a cultivar of Capsicum chinense, with a fruity flavour under the heat. It is a close relative of the habanero.

Grown and cooked across the Caribbean.

Flavour

Fruity, floral, and fiercely hot.

How to use it

Pierce or chop it into stews and sauces. The seeds and ribs are the hottest part. Wash your hands after handling it.

Storage

Refrigerate fresh peppers, or freeze them whole. Dried ones keep in a jar.
