Shredded Meat

Meat cooked until it can be pulled into strands. In the arepa it is stewed beef, shredded after a long braise. The strands are the muscle fibres separated once the collagen has melted.

Origin

A way of serving braised meat, especially in Latin American fillings.

Flavour

Savoury and concentrated from the braise.

How to use it

Moisten it with its cooking juices and pile it into arepas, tacos, and pies.

Storage

Refrigerate and reheat with a little liquid, or freeze.
